
This is an adapted recipe from the back of the box of quinoa flakes that I have in my pantry. I haven’t had any trouble finding ways to use quinoa flakes, but I was just checking out the packaging and thought the recipe would be fun to make. Not only was it fun, but easy. It’s a great recipe for a quick cookie fix!
1/4 cup yacon syrup
1/4 teaspoon stevia
1/4 cup vegetable shortening
1/4 cup unsweetened soy nut butter
1/2 teaspoon sugar free vanilla extract
1/2 cup rice flour mix
1/4 cup plus 2 tablespoons quinoa flakes
1/2 teaspoon baking soda
1/8 teaspoon salt
Preheat oven 350 degrees F. Line cookie sheet with parchment paper. In a bowl, cream the first five ingredients together with a handheld mixer. Add all the dry ingredients and beat until well blended. Drop mixture in teaspoonfuls about 2 inches apart on cookie sheet. Press with fork in a crosshatch pattern. Bake for about 15 minutes or until golden brown. Let cool completely before removing from cookie sheet.
Makes about 15 cookies. Recipe is easy to double.
