
After inventing and perfecting the ultimate sweetening blend, I of course had to try it out with something that was easy to make, and quick to cook. I hadn’t done a sweet muffin yet, so it was a good time to make one. I needed to do more with my dried cranberries than eat them by the handful!
I got the idea for this recipe from the book Gluten Free Baking Classics by Annalise G. Roberts. This book is really becoming a favorite of mine! The recipes I have made have been fantastic. I’m super pleased with the sweetening blend, especially after the muffins cool. The’re not rock hard, don’t have a trace of a cooling effect, and are just sweet enough, not sickeningly so. I don’t need to warm them to make them soft, and they stay soft if stored properly. I can’t wait to use it in other baked goods.
2 cups brown rice flour mix or all purpose gluten free flour mix
2/3 cup Ultimate sweetening blend
1 tablespoon baking powder
1 teaspoon baking soda
3/4 teaspoon xantham gum
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ginger
1/4 teaspoon salt
1/2 cup shredded carrot
1/2 cup dried cranberries
1/2 cup coarsely chopped hazelnuts
1/2 cup milk sub of choice
1/2 cup oil
3 teaspoons egg replacer
1 teaspoon sugar free vanilla extract
Preheat oven 350 degrees F. Line muffin tin with paper liners.
Combine the first nine ingredients in a large mixing bowl. Add carrots, cranberries, and hazelnuts. Stir to distribute evenly.
Combine milk and oil in a separate bowl. Add egg replacer and vanilla extract and stir to dissolve egg replacer. Add liquid mixture to dry ingredients. Stir until just blended and no dry streaks remain.
Fill muffin tins 2/3 full and bake for about 25 mins. Remove from tins and cool on a rack. Cooled muffins can be stored in plastic container in fridge for up to five days.
Makes 12 muffins
