Forgive me. I said that the carrot cranberry muffin recipe was up next, but you can’t really make them unless you have dried cranberries on hand. Drying your own is really the only option, as the majority of dried cranberries for purchase are loaded with sugar.

This is an adaptation of a recipe that I found in a Nov 08 issue of Southern Living magazine. I don’t believe my version can be called a latke, since it doesn’t have the traditional matzo meal and egg whites.
