Panisses

Yes! I was first introduced to “chick pea fries” by David. I looked at the picture and thought, “Oh please don’t let those be French toast sticks! I didn’t think those existed in France!” I was pleased to know that they were made from chickpea flour. Something that’s high protein and low glycemic. A perfect fit for the diet.

And they are so easy to make! And fun to eat! How could I not be excited about these.

I halved the recipe, since I’m the only one that will be eating these, but the recipe is easily doubled.

2 cups of water
1 teaspoon olive oil
1 cup of chick pea flour
1/4-1/2 teaspoon of salt

oil for frying
salt and pepper for dusting
3 saucers
cooking spray
Whisk
Wooden spoon
4 quart pot
fry pan
plate covered with paper towel

Coat saucers with cooking spray. Set aside. In a 4 quart pot, place water, olive oil, and salt. Heat until hot. Began stirring the water with a whisk (I used one of my beaters from my mixer) and slowly add the flour. Continue whisking until mixture becomes thick and hard to stir. If it starts to boil, turn down the heat!

Working very quickly, use a spoon and pour mixture in prepared saucers. Smooth the top with back of spoon or knife. Once mixture starts to set, you won’t be able to smooth the top. It will taste just as good, but won’t look as pretty. Let cool completely.

Remove cooled mixture from saucers to cutting board and cut into strips about 1/2 inch thick. They will have very cool looking tapered edges. Heat about an inch of oil (I used olive) in a fry pan. When you see the oil swirling, but not smoking, lay a few strips in the oil. Don’t let them touch. You should have enough oil covering the strips so you don’t have to turn them, but if not, once the bottom is nice and brown, turn over.

Fry until nicely browned and transfer to paper towel covered plate. You should have nice, puffy, golden-brown steak fries!! Sprinkle with salt and pepper. Continue with remaining strips until done.
