BBQ Chicken and Waffle Sandwich

Ha! Roscoe’s Chicken and Waffles ain’t got nothin’ on me! Sure it looks a little messy but…who cares!
These are Onion Garlic waffles. Yeah, I said it! I put onion and garlic in my waffles. And it was good! Real good!
It goes really good with extra barbecue sauce slathered on. Seriously, you need to get on this! With the crispy texture and just a hint of sweetness, I don’t need any bread!
Onion Garlic waffles
2 cups all purpose gluten free flour mix (see below)
3 tablespoons yacon syrup
1 tablespoon baking powder
1 teaspoon salt
1/4 cup soymilk powder
2 teaspoons onion powder
1/3 cup grapeseed oil
2 eggs
2 cloves garlic, minced
1 cup carmelized or nicely browned onions (you can do a mix of onions too!)Combine all ingredients together. Starting with a 1/2 cup of water, add enough to make a smooth, thick pourable batter. I like this method because I can control the thickness of my batter better.
Follow your manufacture’s instructions for your waffle maker.
Makes 8 (Belgian style) waffles
*Freeze extra for future sandwich inspiration!
*This particular flour mix I used was 1 cup rice flour, 1/3 cup each amaranth, quinoa, and buckwheat flour, 2/3 cup potato starch, 1/3 cup tapioca starch. Use whatever gluten free flour mix you like.
*Don’t forget the barbecue sauce!

Waffles are the best fake-bread ever on this diet!
