Traveller's Waffle Mix

I never mean to have long pauses in posting. My intentions are always good, and I try my best to always post regularly.
We all know how life can get in the way sometimes. These past couple of weeks, I have packed up my apartment, moved from the Midwest to the Southeast, and had a “fantastically great” July 4th weekend in our nation’s capitol (to de-stress from the move). I have not been home long enough to find half my clothes, or even my cooking utensils so that I could make something.
So, I went out and bought a waffle maker.
I’m so glad I did! This has been a great investment. I can make something from scratch and keep my sanity.
I’ve been wanting to do a vegan waffle, so I was able to finally come up with a recipe that I like, and can take along with me. I sometimes have access to waffle makers on the road, and instead of drooling over other people’s waffles I can enjoy one (or two) for myself.
In a ziploc bag, combine:
1 cup all purpose gluten free flour mix
1/2 tablespoon baking powder
1/2 teaspoon salt
2 tablespoons organic soymilk or coconut milk powder
When you’re ready to make waffles add:
2 tablespoons agave
1 travel package of milled flax seeds
1/2 to one cup water
Add enough water for your desired consistency. I like a thick, but pourable batter, about 3/4 cup water.
Make waffles according to waffle maker directions.
Makes about 3 big round or 6 small square waffles.
