Sweet and Spicy Nuts

I recently saw yacon powder available on the internet. Since I was familiar with yacon syrup, I decided I wanted to try the powder. It’s made by Navitas Naturals. It’s much lighter in taste than yacon syrup, and not as sweet as sugar, but very pleasant. Sometimes yacon syrup’s taste is decribed as a cross between apples and molasses, and I think the yacon powder has more of the apple characteristics. I think it is still best combined with stronger, spicier flavors.
I thought that a nice sweet spicy coating for nuts would be a great way to try this out, and this snack has been a hit with everyone who has tried it so far. It’s just sweet enough, with some good kick from cayenne pepper. It satisfies my crunchy, sweet and salty yearnings in one snack.
You can use a mix of almonds, brazils, pine nuts, and hazelnuts and make a completely different kind of mixed nuts. That would be fun!
2 cups raw almonds (or other favorite raw nuts)
2 tablespoons of ghee or non hydrogenated palm oil, melted
2 tablespoons of Yacon powder
1/8 teaspoon salt
1/4 teaspoon cayenne pepper
1/4 teaspoon cinnamon
1/4 teaspoon freshly ground black pepper
parchment lined baking pan
Preheat oven to 350F. In a bowl, toss nuts and oil, making sure nuts are well coated. Spread nuts in a single layer on baking sheet, and bake for about 10 min.
Meanwhile, in a separate bowl, combine yacon powder, salt, cayenne, cinnamon and black pepper. Mix well.
Remove nuts from oven, and sprinkle spice mixture evenly on the hot toasted nuts. Toss until oil is completely absorbed. Let nuts cool to room temperature in pan before serving.
Makes 2 cups.
