Baked Rice

What’s the next best thing to a rice cooker? Your oven! I have never baked rice before. I have always used a pot or a rice cooker when I was lucky enough to have one. I’m visiting family this week, and all the pots are occupied with leftovers, so I found some things to work with. I prefer glass baking dishes, but again, I’m using what is available to me at the moment.

1 cup rice
2 cups water (veggie or chicken stock is great here!)
2 tablespoons of preferred cooking oil (olive, palm, ghee, coconut)
1/2 onion chopped
1tsp garlic powder
1tsp salt

Frypan

Preheat oven to 350 degrees F. In a frypan, heat oil, and cook onion until translucent. Add rice and stir to coat rice grains in oil. Add salt and garlic powder. Transfer rice to baking dish. Using the same pan, add water (or stock) and bring to a boil. Pour over rice. Cover your dish and bake for 30mins. Fluff rice with fork.

Note: Line the bottom of your oven, or lower rack with foil to catch drips.

Serves 4 as a side dish.

No more watching my rice to keep it from burning!
